The Hong Kong Sommelier Association has been established since 1989 and we have sufficient experience to set a rating system to have a better, encourage way in our membership.

Our membership will be set into four levels, say Member, Sommelier and Senior Sommelier; and final gain to be a Master Sommelier.

Member

for those who are interest in sommelier job and apply for the Hong Kong Sommelier Association membership with attending the sommelier workshop and pass the test. Basic requirement for application in membership being the same and reduce to 1 year experience.

Sommelier

for those who has been with the Association three years or above that can get through a test to certify as a Full Sommelier membership. For those who are in the industry with a good background in wine service, i.e. carrying a title of Sommelier in a restaurant group, hotel and club or working in F&B service over 3 years; and pass a test to be certified as a Full Sommelier Member.

Senior Sommelier

continue 3 years service in Hong Kong Sommelier Association after being a full Sommelier member, and pass a test with theory, skill test and blind tasting to certify for a Senior Sommelier; there is no other way to be titled as a Senior Sommelier.

Master Sommelier

being a Senior Sommelier membership and continuous service in the Association with assistant in training workshop or course and rate to be one of the Sommelier Association trainers; then recommended by the Association committee and being confirmed within the year. The Master Sommelier can represent HKSA in international conference and training.


Sommelier Leveling Examination

Member

50 Multiple choices – level 1-35, 2-10, 3-5
5 SA questions – level 1
Practical – proper procedure in opening a bottle of wine
Cost : whole day workshop $200 + Exam $200
Total 45 minutes
Twice a year planned

Sommelier

80 Multiple choices – level 1-20, 2-30, 3-30
20 SA questions – level 1-5, 2-10, 3-5
5 F&W matching questions – in written
Blind tasting of 1 white and 1 red in written (grape, vintage, region, price)
Practical – opening and decanting a bottle of wine
Total :6 hours
Once a year planned

Senior Sommelier

120 Multiple Choices – level 2-40, 3-80
30 SA questions – level 2-10, 3-20
Wine list correction – in written with 10 mistake list
Blind tasting and nosing – 1 white and 1 red with 10 liquor in nosing, need to be presenting in front of judge panel
F&W pairing with up-selling technique together to present in front of judge panel, panel view on up-selling technique sequence and satisfactory at the end; and F&W matching in picking any food item from the basket which has already model answer; and panel can give 30% by personal preference.
Practical – opening and decanting a bottle of wine
One mystery action – lighting a cigar; cocktail making; serving liqueur; making irish coffee; Chinese tea brewing; serving sake; questioning Chinese white spirits
Total one and an half day
Once a year planned

Master Sommelier

Manage and carry 5 seminars in wine education, can be in any format, including planning, organizing, material support and closing.
Also help in 10 tutorial of sommelier association activities.
When the candidate operate those seminars and tutorials, a judge panel consist of 2 Senior Sommelier (including one committee) will view the whole process.
Audience evaluation at the end of the seminar will be counted as final score.

For all examination, 70% pass rate is required.
